The #MeatMatters Challenge

When you have a busy family life it can be hard to find time to cook a healthy meal from scratch. It can be so easy to turn to quick frozen meals, I know because I do it (please don’t hate me lol). But it is possible to do this with a bit of forward planning. If you plan what you are going to eat on which days and buy everything you need when you do your weekly shop, cooking from scratch is much easier.
BritMums and Simply Beef and Lamb, set the #Meatmatters challenge. They wanted people to come up with a quick and easy beef or lamb dish. Instantly I thought of doing pasta Bolognese as Booey loves cooking that and it is something that we all love. But with the warmer weather starting to make an appearance I decided to go with minted lamb burgers instead.
Lamb is a great source of protein and vitamins and minerals such as Niacin, Vitamins B6 and B12, Zinc and a source of potassium. I didn’t realise lamb contained all of these things.
Lamb burgers are really quick and easy to make. We got some salad and some sweet potato chips to go with them. First thing to do is to put the sweet potato chips in the oven as they take the longest (we bought the frozen ones for quickness).
Next we put the lamb mince (we got the lean reduced fat mince) into a bowl and mixed it with some dried mint. You don’t have to add mint if you don’t want to, we just added it for some extra flavour.
Then it is time to make the burger patties. Hubby bought this nifty little burger press maker from Amazon (men and the need for a gadget for everything!). You can also use it to stuff burgers as well, but we have never used it for that.
Now it is time to put the burgers on the grill. We use the Tefal Optigrill as it cooks the burgers from both sides and any excess fat runs off making the lamb burgers even leaner.
While the lamb burgers are grilling make up some salad to accompany your meal. Once the lamb burgers and sweet potato chips are cooked serve it all up on a plate and ta da, a quick healthy meal for all the family!
